Charred Broccoli with Almonds & Cherries

 

I am challenged daily to eat more vegetables. I found this recipe in Eating Well and have been making it weekly,  the veggies go down easily!

 

Ingredients:

 

10 cups broccoli florets (1 1/2 lbs)
6 TBSP olive oil, divided
3/4 teaspoon kosher salt
1/2 cup skin-on sliced almonds
2 teaspoons minced garlic
2/3 cup whole-milk plain yogurt
1/3 cup dried cherries

 

 

Directions:

 

15 min to make, ready in 25 min.

 

1.  Position an oven rack in lowest position: preheat broiler to high
2. Toss broccoli with 1 TBSP oil and salt in a large bowl.  Spread evenly on a large rimmed baking sheet.  Roast on the lowest rack until tender and charred in spots, 10-15 minutes.
3.  Combine almonds and garlic with the remaining 5 TBSP oil in a small skillet.  Cook over medium heat until just starting to brown,–about 5 min.  Scrape the mixture into a serving bowl.  Stir in yogurt and cherries.
Add the broccoli and stir to coat with the dressing.  Serve room temperature or cold.
